We carefully choose the ripest of pineapples to maximise it's natural sugars, and then pickle them lightly with our 4 years lemongrass vinegar to add a complex depth and aroma. Paired with a silky smooth panna cotta and crème infused with locally grown young ginger, it is a fulfilling yet refreshing dessert for this summer heat.
